Oxtail, Red Kidney Beans, Thyme, All Purpose Seasoning & served with Brown Rice. If made in a pressure cooker this meal will take a much shorter time. However, I like the old fashioned Caribbean way of slow cooking for hours in a cast iron pot, topping up water as required. It's a Sunday type of meal, but one that it well worth the wait!!

These peppers can be bought by the box load for only £2 at your local market (Lewisham is where I do my weekly market shopping for fruit, veg & meat).
